How to Get Started on Your Own DIY Vegan Meatball Recipe
We’ve all made our own vegan meatballs.
But the ones that you see in the grocery store and the ones you see at home, these are not what you want.
And that’s where the pioneer woman comes in.
I am an active vegan and a vegetarian.
I’ve spent countless hours reading up on vegan and vegetarian recipes.
And I’ve also made vegan, vegetarian, and gluten-free meatballs with a vegan crust, but this is my first attempt at a vegan meatball recipe.
It took me a while to make this, but the result is just delicious.

Vegan Meatballs: Ingredients:1 pound ground beef, chopped 1 1/2 cups of water2 tsp.
salt1 cup ground turkey 1 1 1,000 calories (1 serving) 1/4 cup of organic spinach 1/3 cup of nutritional yeast (or 1/8 cup of yeast and 1/16 cup of water)2 cups organic cashews (I used Optimum)1/2 cup of walnuts 1 cup of chopped cilantro (I didn’t have cilantro, but you could use any combination of herbs and spices you like)1 cup of coconut oil, melted 1 tsp.
black pepper1/8 tsp.
ground cloves (or to taste)1 tsp.
cayenne pepper1 cup vegan shortening (I use this Vegan Shortening)1 1/6 cups of organic tomato sauce1/3 tsp.
sea salt1 tsp cinnamon (optional)1 large carrot, peeled and chopped1 cup organic white onion, diced1/6 cup organic kale, chopped1/5 cup organic cashew milk (I like this Organic Organic Organic Cashew Milk, but any milk would be fine)1-1/1 cup unsweetened organic coconut milk1/10 cup vegan cheese (I usually use this Organic Vegan Cheese)1 small egg1 cup coconut flour, divided1 cup nutritional yeast1/7 cup vegan butter (I typically use this vegan butter)Preheat oven to 400 degrees F.1.
Measure and cut the beef into pieces and add them to a blender or food processor.2.
Blend until well mixed.3.
Add the water, salt, and turmeric, and pulse a couple times to incorporate the spices.4.
Add 1/1 teaspoon of baking powder, cinnamon, and black pepper, and blend again until smooth.5.
Add in the spinach, nutritional yeast, and cashews and blend until smooth and creamy.6.
Add vegan shorteners and the nutritional yeast mixture and blend well.7.
Add coconut oil and blend for a few seconds to mix.8.
Add cashew butter and blend.9.
Stir in the coconut flour mixture and nutritional yeast.10.
Add baking powder and cinnamon and blend just until incorporated.11.
Add an egg and blend a little longer.12.
Add vegetable broth and blend to combine.13.
Add chopped cheddar cheese and mix until well combined.14.
Add more salt if needed.15.
Serve immediately or refrigerate for at least an hour.16. Enjoy!
